Vegas Strip Steak with Chimichurri & Tomatoes


The Vegas Strip steak is a relatively new cut of steak that is only available a few places with Creekstone Farms being one of them! This cut is similar to a Flat Iron Steak or a New York Strip and has wonderful steak flavor. This piece can be used for the main course or is great serves as an appetizer as well.


Ingredients

 

 

Vegas Strip Steak

  • Creekstone Farms Vegas Strip Steak
  • Kosher Salt
  • Black Pepper
  • Oil – about 2 Tablespoons (use high temp oil such as peanut, canola or corn)

 

Chimichurri

  • 1 bunch parsley, chopped
  • 4 cloves garlic, minced
  • 1 bulb shallot, minced
  • 1 sprig oregano, chopped
  • 1 tsp red pepper flake
  • ¼ cup good red wine vinegar
  • ¾ cup olive oil
  • 1 tsp kosher salt

 

Blistered Tomatoes

  • 1 ½ cups mixed cherry tomatoes
  • Oil – about 1 Tablespoon (use high temp oil such as peanut, canola or corn)
  • Kosher salt
  • Black Pepper

 


Instructions

 

 

Vegas Strip Steak

  • Remove Vegas Strip from refrigerator approximately 1 hour before cooking until it is room temperature.
  • Preheat oven to 225. Heat an oven proof cast iron or steel pan to medium high heat. 
  • Pat dry the Vegas Strip with towel and liberally season with kosher salt. 
  • Add oil to the pan and heat until hot.Place vegas strip steak in pan and sear for 2 minutes or until dark caramelized brown. Then turn over and sear the other side for 1 minute.
  • Remove from stovetop and place in oven. Cook until desired internal temperature.
  • Take out of oven and place on cutting board. Season with coarse black pepper and rest for 15 minutes before slicing.

 

Chimichurri

  • Mince garlic and shallots and cover with vinegar for 15 minutes. 
  • Chop parsley and oregano. 
  • Add red pepper flake, salt and olive oil to the vinegar mixture then fold in chopped parsley and oregano.

 

Blistered Tomatoes

  • Heat large cast iron or steel pan on high heat. 
  • Put oil in the pan then add the tomatoes when oil is hot. Gently toss the tomatoes until fully blistered. 
  • Remove from pan and season with salt and pepper.

 

To Serve:

Slice the Vegas Strip Steak and lay slices onto a platter and cover with blistered tomatoes. Dress with the chimichurri and serve.
