Spice Rubbed Creekstone Farms Tri Tip Sandwiches with Grilled Onions & Toasted Garlic Buns

If you are looking for a less traditional sandwich that is always a crowd pleaser then this recipe is a great option! Tri-Tips can also be great when ate alone or on a sandwich like this recipe suggests.

 

Ingredients

Spice Rub:

  • 1/2 C. Paprika
  • 1 t. Cayenne Pepper – ground
  • 1 t. Black Pepper – ground
  • 1 t. Dry Thyme
  • 1 t. Dry Oregano
  • 2 t. Onion Powder
  • 2 t. Garlic Powder
  • 1 t. Cumin – ground

Grilled Red Onions

  • 6 Red onions
  • Olive Oil – for brushing
  • Salt & pepper

Garlic Toasted Buns

  • Hamburger Buns – or any round bun of your choice.
  • 1/2 Pound Unsalted Butter
  • 6 Cloves garlic – peeled and crushed

Instructions

Spice Rub:

  1. Mix all ingredients well in dry mixing bowl with a whisk until thoroughly combined.
  2. Sprinkle kosher salt on all sides of two whole tri tips. Season the tri tips with a liberal dusting of the spice mixture. Rub it into the meat a bit as well. Make sure the tri tips are well seasoned with the spice rub.
  3. On a medium-high grill, put the tri tips on so that the more round side is facing up. Cook for about 4 minutes and turn over onto it’s more round side and again, cook for about 4 minutes.
  4. Carefully grill the meat all over including it’s sides. Put off the a cold spot on your grill and close the lid. If you can maintain a grill temperature of 275-300 degrees, just let the tri tips cook 15 minutes or until a probe thermometer reads 134 degrees internal temp.
  5. Take tri tips off the grill and let rest about 15 minutes before slicing.
  6. Slice thinly and place on a toasted bun with some grilled red onions!

Grilled Red Onions

  1. Peel the red onions and then cut into about  ¼ inch round slices.
  2. Lay out slices in one layer on a large plate or tray and brush with some olive oil. Season each slice with salt and pepper on both sides.
  3. On a nice hot grill, lay the onion slices down not overlapping. Let cook for about 3-4 minutes on it’s first side and the cook the next side for around 3-4 minutes as well. Grill these onions to your preference. They are best when they are a little charred and the onions are very tender.

Garlic Toasted Buns

  1. Slowly melt the butter and smahed garlic cloves over medium-low heat till completely melted. Season the melted butter with kosher salt and black pepper. Let butter sit for an hour before using so it takes on all that great garlic flavor.
  2. Brush the top and bottom parts of the buns and grill carefully just to get some grill marks on there. Be careful the grill doesn’t flare up because of the butter. Should only be on the grill for 1 minute, just until bun is toasted.
